What is fascinating about the Sauvignon Blanc grown here, particularly in the Graves region, is that it's unlike the Sauvignon Blanc grown anywhere else on Earth. Everywhere else, this grape just tastes like a typical Sauvignon Blanc. Here, it is elevated to heights not found in any other soil. That goes for Semillon too. One can literally taste the rocks from the soil in the wine. There is also that chalky sensation, which inhabits the same terroir. Then you get slivers of white peach, flecks of pineapple, a dollop of nectarine and freshly squeezed lime. All held in check by the rapid acidity that would hold a crab cake hostage.
