Our selection is a blend of 90% Sauvignon Blanc and 10% Chardonnay. The grapes are picked at night so that the grapes arrive at the winery in perfectly cool conditions. This is important because the heat of the sun, even after harvest, will continue to build sugar in the grape. As a result, you have the perfect harmony of soil and sun to produce a clean, crisp and exciting offering, with fruit and flavor to spare. The piquant acidity could stand up to scallops, lobster or black cod.
