This is Don Schliff, a renowned Port Collector and founder of Wine Warehouse. Here he is opening a bottle from 1897. It is opened this way because the cork is so old it would crumble into the wine. Using these hot port tongs will ensure a clean break, and the wine is filtered using a coarse wire screen.
